Agave Cultivation

Our 300+ acres of agave fields are cultivated using polyculture practices — interplanting Agave angustifolia (Espadin), Agave cupreata (Papalometl), and wild native angustifolia on the same fields. This balanced approach nurtures the ecosystem and yields the finest agaves.

10:1 Replanting Ratio We plant at least 10 agaves for every one that is harvested
7% Flowering for Pollination We allow at least 7% of the agave population to flower, ensuring there are flowering quiotes for the nectar feeding bats of the Leptonycteris genre, resulting in pollination

Our Distillery

Our distillery is constructed from natural stone extracted, cut, and polished by hand from the surface of our property — not mined. Highly recyclable, original organic building material requiring no chemicals.

The Oven

Conical Artisanal Oven Made of 100% Volcanic Rock

Our traditional conical oven, built entirely from volcanic rock, slowly roasts the agave piñas over several days. This time-honored method caramelizes the natural sugars, developing the complex flavors that define our mezcal.

The Tahona

2-Ton Volcanic Pressing Wheel

Our Tahona features a two-ton volcanic stone wheel pressing against a volcanic stone floor. This traditional method allows for a more delicate extraction of agave nectar than modern shredders, resulting in exceptionally smooth, ultra-premium mezcal. Our tahona is driven by a clean, battery-powered electric motor. This replaces traditional animal labor while maintaining the pristine, emission-free environment required for true artisanal mezcal practice.

Fermentation

Natural spring water from on-site springs feeds the fermentation process, keeping every step of production rooted in our land.

Distillation

Our stills are 100% handmade hammered copper. Why hammered copper? Hammered copper increases surface area promoting clean tasting mezcal, preventing the development of unpleasant aromas and taste. Resulting in the creation of lighter, crisp tasting ultra-premium mezcal.

We don't use wood to fire our stills, no forests decimated. We use natural gas to efficiently heat our stills.

A Love Letter to Guerrero

Argato is a love letter to the state of Guerrero, its ecosystem, cultural richness, and folklore, like the traditional masks of Guerrero. Mezcal connoisseurs will enjoy Argato's soft taste and distinct notes, transporting them back to the Balsas river bank, home of the cupreata agave.
