MEZCAL ARGATO ARTISANAL DISTILLERY
Distillation is the separation of alcohol from water. Our distillation is exclusively with hammered alembic copper stills.
Mezcal Argato is the only distillery in the State of Guerrero to use these meticulously custom handcrafted hammered copper high quality stills.
During normal distillation of all mezcal making the agave fiber, juice and yeast release sulfur as a by-product which can cause mezcal to have a stringent bitter taste.
Hammered copper stills provide the benefit of increase surface area, exposing the alcohol vapors to more copper thereby increasing the catalytic effect. The benefit of this molecular interaction allows the more removal of sulfur and other unpleasant bitter aromas during distillation
Utilizing hammer copper stills results in the creation of smooth, fruity esters, clean tasting ultra premium mezcal with hints of citrus, and herbaceous sweetness
